Umami Burger

When you’ve got a good burger, you need not much else. In the case of Flipside Burgers PH, which just started flipping burgers at Gyud Food, UP Food Hub, in Quezon City a few days before Christmas 2023, it’s got three really good burgers for everyone to choose from (or have it all if you cannot make up your mind!), and certainly no one is complaining! The truth is that early birds who already got to try the burgers chef Edward Bugia has created for Flipside Burgers are raving about them.

Choice Number 1 is Oklahoma Style Smashed Burger. It is double Angus Beef patties with American cheese, grilled onion, dill pickles, and special burger sauce (concocted by Chef Ed specifically for Flipside) on a nicely buttered and toasted brioche bun. Yes, double patty! And if you want it triple patty, well, you can order an extra patty and have your truly, smashingly indulgent gourmet burger customized for you.

The second choice is simply called Umami Burger. Burger eaters who love to smother their burgers with mushrooms will love this, as the double Angus Beef patties are topped with a generous helping of umami-rich shiitake mushrooms, umami red miso butter, American cheese, grilled onion and special burger sauce.

If you are torn between the two burgers now, you should hear what the third burger on the menu is. It is Breakfast Burger, with chorizo hamonado patties in place of the beef burger patties, and is loaded with perfectly fried egg, American cheese, grilled onion and special burger sauce. Yes, it is chori burger at its best.

For the sides, instead of the usual, no-brainer fries, Chef Ed dug into his creative arsenal and came up not just with Oh So Healthy! Chips but also, get this, fried dill pickles with dip and pickled quail eggs.

For these burgers and sides, people are now flocking to Gyud Food to let their palates judge for themselves. The burger concept that has been brewing in Chef Ed’s mind for about a year now, which is about the same length of time it took to conceptualize and develop the brand into what it is today, is making waves. A food truck with casual outdoor dining facilities that he has been eyeing Gyud Food for besides its fair rent, diverse market, and, of course, the presence of students, whom he sees as always receptive to try new things and is therefore good for business. Come to think of it, students particularly love burgers, and Chef Ed is naturally good at burgers.

“Burgers have always been part of my DNA,” says Chef Ed, who formed BRGR: The Burger Project in 2010.

He also had very good burgers in all his other restaurant projects. Now, at Flipside Burgers, he and his team have perfected what for him is the true essence of what a burger should be — double smashed Angus patties with a nice sear, dill pickles, gooey American cheese, grilled onion, a secret burger sauce, and a nice buttered and toasted brioche.

Three really good burgers form the core of Flipside Burgers’ menu right now, but Chef Ed and his team are working on other variants to add to the menu soon.

“Our idea at Flipside Burgers is that the perfect way to eat a burger is to flip it. Eating it upside down allows the juices to get reabsorbed without making the bottom thinner bun soggy. The ingredients also hit your mouth a different way this way,” explains Chef Ed.

Flipside Burgers PH is open daily from 11 a.m. to 8 p.m. Operating hours extend up to 9 or 10 p.m. on weekends.
