-winning all-day dining restaurant. For a limited time only, savor the classic Thai cuisine prepared by guest Thai chef, Juthakorn “Mink” Suraraksa, who was recently flown in from the luxurious Waldorf Astoria Bangkok.
Yes, expect the finest Thai dishes whipped up by chef Mink, who promises to deliver the distinct and diverse flavors of Thailand. He highly recommends the Som Tam (green papaya salad), which is predominantly sour and spicy, but also has an underlying sweetness; and the Yam Som O (Thai pomelo salad), a refreshing starter with the nuttiness and spiciness of coriander, mint and peanuts.
Another wonderful appetizer is the Thai Prawn Cake accompanied by a sweet-and-sour relish sauce with red chili that further enhances the shrimp cake’s soft texture and flavor. Of course, you can never go wrong with the Pla Sam Ross (fried and crispy sea bass with Thai chili sauce), a light but tangy dish in itself. It’s an absolute delight with the subtle taste of cilantro, Thai basil and red chili accentuating the freshness of the fish.
Quality and freshness are apparent in chef Mink’s dishes, such as the Tom Yum Goong, although its tartness is overpowering, leaving only a subtle hint of its complex flavors. The refreshing Yam Mamuang (green mango salad) comes as a welcome break from the heat of chilies.
For the piece de resistance, the heavenly sweetness of the Mango Sticky Rice will mellow down one’s taste buds after the spice celebration.
Legendary Chefs Series
This special Thai food festival, which will run until 30 June, is part of Conrad Manila’s Legendary Chefs Series, featuring the cuisines from three world-renowned master chefs.

Legendary Chefs by Conrad Manila is a three-part series, which will celebrate the finest culinary masterpieces by some of the world’s premier chefs every month, from June to August 2023. Next in line after chef Mink’s Thai treats are celebrity chef Jereme Leung, who will once again bring new and distinct flavors to Chinese gastronomic favorites in July, and chef Valerio Pierantonelli, who will dish out Italian signature dishes in August.
Chef Mink has 14 years of culinary experience as assistant executive sous chef at Waldorf Astoria Bangkok. He has been an integral part of the hotel’s pre-opening team since February 2018, when he initially joined as a sous chef for banqueting. He followed his passion for cooking after leaving his academic studies at Thammasart University’s Faculty of Political Sciences and completed a Certificate in International Cuisine from The Oriental Hotel Apprenticeship Program in 2009.
He has gained culinary expertise through his experiences at various establishments including Evason Phuket and Six Senses Spa in Phuket, Elements at The Okura Prestige Bangkok and the award-winning The House on Sathorn, where he served as a pre-opening junior sous chef.
Thai spread
The delicious Thai spread is situated in one bright corner of the Brasserie on 3 buffet area, beside the wide range of international staples. The curated menu is not very expansive but it summarizes Thai cuisine competently
— anything you get in the buffet spread will definitely please you.
The Weekday Lunch Special Buffet is available for P1,799 nett (Monday to Friday). Normal rates apply for weekday dinner and weekend lunch and dinner service.
