Chocolate Banana Walnut Loaf

Father’s Day is the perfect time to show your dad how much you appreciate him. So, why not surprise him with this delicious Chocolate Banana Walnut Loaf?

“It is much healthier than most baked goods,” says chef-instructor Mira Cruz. “The bread’s sweetness comes from the healthy sugars naturally present in bananas, so it is considerably healthier than other sweet baked goods that rely on added sugars.”

This recipe is quick and easy to prepare. It only requires one bowl. There’s no need for a mixer. “And, it doesn’t make much of a mess,” adds Cruz, who owns and runs Artisan Emporium.

“The riper the banana you use, the sweeter the banana bread,” she says. Cruz has been baking the banana loaf and giving it as gifts to family and friends since 2009.

“Baked goodies are perfect gifts for birthdays, holidays and other special occasions like Father’s Day,” shares Cruz. “So, be the life of the party showing up with a nicely wrapped banana loaf in hand.”

Freshly baked banana loaf will last for seven days chilled and four days at room temperature.

 

Chocolate Banana Walnut Loaf

Yield: 2 loaves

 

Ingredients

250g Bread flour

½ tsp Salt

8g Baking Soda

134g Vegetable oil

200g Brown sugar

50g White Sugar

54g Egg

134g Fresh Milk

2 tsp Vinegar

250g Bananas, over ripen, mashed

60g Chocolate Chips or chunks

40g Walnuts, chopped

 

Optional:            

1 pc Banana, strip, cut lengthwise

 

Sift together bread flour, salt and baking soda. In a bowl, whisk together vegetable oil, brown and white sugar. Add the egg gradually. Alternately incorporate dry ingredients and the milk with vinegar. Do not fully mix. Add the mashed bananas, chocolate chips and walnuts. Mix just until combined. Pour over a greased loaf pan, lined with baking paper.

Using a flat scraper dipped in a bowl of oil, score the center once. Bake at 370˚F oven for at least 30 minutes or until the cake tester comes out clean when poked at the center.
